Tamarind Chutney

  • How to make tamarind chutney:

  • Ingredients:
          1. Tamarind (1 small bowl)
          2. Oil (1 tblspn)
          3. Ginger 
          4. Green chillies (2-3 no )
          5. Jaggery (guud)
          6. Red chilli powder
          7. Salt to taste
          8. Water (1 cup)
          9. Curry leaves (6-7 no)

  • Preparation & Cooking:
          1. Soak the tamarind in water for half hour.
          2. After half hour crush the tamarind with hands & take out the pulp.
          3. Chop the green chillies,take about a inch of ginger & chop finely.
          4. Heat oil in a wok/broad vessel,add the chopped ginger,green chillies
              & curry leaves,saute for 2 mins.
          5. Add about 1 tspn  of red chilli powder & salt,saute for 2 mins.
          6. Slowly add the tamarind pulp and mix well.
          7. Take about half of small bowl full of jaggery/guud,crush it properly &
               while the mixture is boiling add the jaggery/guud.
          8. Mix well or stir till the jaggery/guud dissolves completely.
          9. Cook the mixture for 5 mins on low flame.
         10. The tamarind chutney is ready to eat.

  • Servings: Three-Four

  • Notes:
        1. If you want a proper fine tamarind pulp, just blend it once in blender or mixer.

Its my favourite. We usually prepare it in different way. I would like to have it with anything. Surely try for this one.
