Szechwan Masala Dosa


  • How to make Szechwan Masala Dosa:





  • Ingredients:
    • For Dosa Batter
                     1. Rice grains (2 small bowl)
                     2. Urad Dal (1 small bowl)
                     3. Fenugreek seeds/methi dana
                     4. Thick Poha/Jada Poha
                     5. Oil
                     6. Salt to taste
                     7. Water

    • For Masala
                    1. Potato (5-6 boiled)
                    2. Cabbage (small shredded)
                    3. Carrot (2 no shredded)
                    4. Onion (1 no chopped)
                    5. Green Chillies ( 3-4 chopped)
                    6. Tomato (1 no chopped)
                    7. Curry leaves/Kadipatta
                    8. Schezwan sauce
                    9. Oil (1 tblspn)
                   10. Capsicum (1 no shredded)
                   11. Mustard seeds (rai)
                   12. Cumin seeds (jeera)
                   13. Salt to taste
                   14. Turmeric powder (haldi)


  • Preparation & Cooking:

          1. Heat oil in a broad wok/kadhai,add the mustard & cumin seeds & curry
              leaves.
          2. Add the chopped onion,green chillies & tomatoes,saute for 2-3 mins.
          3. Add the turmeric powder & smashed boiled patatoes,mix well.
          4. Cook the sabji for 3-4 mins. Add the shredded cabbage,carrot & capsicum.
          5. Mix all the ingredients and cook for 5 mins on low flame. Remove from heat.
          6. Heat oil in a non-stick pan,pour the ladelful of the dosa batter.
          7. Spread in circular motion,increase the flame to high for 1-2 mins.
          8. Lower the flame, spread the schezwan sauce over the dosa, take 2 tblspn of
              masala sabji and spread over the dosa.
          9. Cover with the lid and cook for 2 mins.
         10. Roll over the dosa from both the sides over the top and cut in two pieces.
         11. Serve the dosa with sambar & peanut/groundnut chutney.
         12. Repeat the step with remaining batter to make more dosas.
