Seviyaan Kheer/Vermicelli Kheer

  • Seviyaan Kheer/Vermicelli Kheer:


  • Ingredients:
         1. Vermicelli/Seviyaan (home made of wheat)
         2. Milk (750 ml)
         3. Sajuk Toop/Pure Ghee (1 tblspn)
         4. Sugar (6-7 teaspoon)
         5. Raisins (9-10 pieces)
         6. Cashewnuts (5-7 pieces)
         7. Almonds (5-6 pieces)
         8. Elaichi/Cardamon seeds (of 2-3 cloves)

  • Preparation & Cooking: (Method 1)
          1. Take about 750 ml of milk in a broad vessel and give it a boil.
          2. If the vermicelli/seviyaan are long break them in small long pieces
              do not crush it too fine.
          3. Heat pure ghee in a vessel, add the broken vermicelli/seviyaan and
              saute for about 3 mins on low flame till it turns brown-golden color.
          4. Switch off the heat of the vermicelli and also of the milk side once it is
              boiled.
           5. Wait for sometime so that temperature of the milk lowers, otherwise the 
               milk will get spoiled after adding to the vermicelli/seviyaan.
           6. After 5 mins add the milk to the vermicelli vessel, turn on the heat, maintain
               low flame.
           7. Add sugar,mix well and let it boil for 2-3 mins.
           8. Cut the cashew-nuts and almonds in small pieces,add the almonds,
               cashew-nuts and raisins and mix well.
           9. Crush 2-3 seeds of elaichi/cardamom and add to the kheer.
          10. The vermicelli/seviyaan kheer is ready to eat.

  • Preparation & Cooking: (Method 2-Takes 10-15 mins to make)
          1. Cook the vermicelli/seviyaan in a or two cups of water.
          2. Once cooked,add cold water & drain out all the hot water from the vermicelli.
          3. Add some warm milk in the cooked vermicelli/seviyaan.
          4. Add the dry fruit pieces. Add sugar. Mix well
          5. The kheer is ready to eat in just 10-15 mins. 


  • Notes:
         1. The method 2 does not involve roasting in ghee. Good for diet conscious people.
         2. Good option when you or your kids are very hungry. Working ladies this is a 
              real quick way for you to cook this kheer.
