Nutritious Khichdi

  •  How to make Nutritious Khichdi:

                                                         


  • Ingredients:
         1. Rice grains (2 no small bowl)
         2. Masoor dal (split red lentil-1/4 small bowl)
         3. Hara moong (whole green gram-1/4 small bowl)
         4. Kabuli chana (chick peas-1/4 small bowl)
         5. Matki (moath bean-1/4 small bowl)
         6. Rajma (kidney beans-1/4 small bowl)
         7. Onion (1 no medium chopped)
         8. Coconut (small-medium cut pieces)
         9. Garam masala(1 spoon)
        10. Green chillies (3-4 chopped)
        11. Garlic (lehsun- 6 cloves chopped)
        12. Chilli powder
        13. Ginger (1 inch chopped)
        14. Oil (1 & half tblspn)
        15. Turmeric powder (haldi)
        16. Mustard seeds (rai)
        17. Cumin seeds (jeera)
        18. Salt to taste
        19. Coriander leaves to garnish

  • Preparation:
    • Sprouts for khichdi
                    1. Take all the grains except masoor dal, wash them and soak in water
                        for five to six hrs.
                    2. Remove the water,cover it and keep it overnight for sprouting.
                    3. Next day clean it and add masoor dal also.
    • Coconut-chilli paste
                    1. Take 1/2 small bowl of fresh coconut pieces cut in small to 
                        medium size.
                    2. Cut 3-4 green chillies.
                    3. In the grinder pot add the coconut pieces, green chillies, garlic
                        ginger chopped.
                    4. Add 1/2 cup of water, grind and make a paste.

  • Cooking:
           1. Heat oil in a broad vessel/like cooker, add mustard & cumin seeds.
           2. Add the chopped onion, saute till it is brown.
           3. Add haldi, garam masala & chilli powder (one teaspn).
           4. Mix and saute for 1 min, add sprouts mixture and saute for 5 mins.
           5. Add the coconut-chilli paste and saute for 3 mins.
           6. Take 2 to 2&1/2 small bowl of rice grains wash clean and add them.
           7. Add about 2 cups of water and salt to taste.
           8. Cover the lid and cook for 35 mins.
           9. While the khichdi is cooking your kitchen will be filled with wonderful
                aroma.
          10. Garnish with coriander leaves and the khichdi is ready to eat.       

  • Servings: Three
