Lauki Matki ki sabji/Bottle Gourd with Moath Beans

  • Lauki Matki ki sabji



  • Ingredients:
          1. Lauki/Bottle Gourd (250 gms cut in small-medium size)
          2. Matki/Moath bean (1/4 small bowl soaked & sprouted)
          3. Onion (1 no chopped)
          4. Tomato (1 no chopped)
          5. Oil (1 tblspn)
          6. Mustard seeds (rai)
          7. Cumin seeds (jeera)
          8. Turmeric powder (haldi)
          9. Chilli powder (1-2 teaspoon)
         10. Garlic-Ginger paste (wet masala)
         11. Salt to taste
         12. Coriander leaves to garnish

  • Preparation & Cooking:
          1. Heat oil in a non-stick kadhai, add the mustard & cumin seeds.
          2. After the seeds crackle, add chopped onion,saute for 2 mins.
          3. Add the wet masala, saute for 1 min.
          4. Add the turmeric powder, chilli powder about 1-2 teaspoon and mix.
          5. Add the matki/moath beans and chopped tomato,saute and cook for
              3-5 mins.
          6. Add the cut lauki/bottle gourd,salt and mix well.
          7. Cover the lid and cook for 15-20 mins on medium flame.
          8. Add some water if required.
          9. Garnish with coriander leaves and serve with rotis.
